Happy Birthday

I have done this cake twice.  Learned a lot the first time which made the second time easier and more successful, but it is still a lot for work to pull together.

   
 
   

Auntie's Birthday

This is probably my favorite cake that I have done.  Maybe because it was for Auntie.  But I loved the colors for her October birthday on the basket weave.  Which by the way is another favorite.  Auntie was so sweet.  She kept all the royal icing flowers (that were not taken) home with her, put them in the freezer and over a few months ate them.  She said that if Debbie went through all the trouble to make them she was going to eat them.  She said they tasted very good.

   

Happy Birthday Jesus

I was ask to do a baby Jesus birthday cake.  The design was up to me.  My husband came up the the crown of thorns idea.  To make the crown, I weaved rolls of fondant around a ring of rolled up of wax paper.  Then before the fondant dried, I cut the crown into two sections.  This allowed for easy removal of the paper without breaking the crown into pieces.  After the fondant dried (several days), I "welded" (with royal icing) the rolls together in various places to keep them together when the paper was removed.  Then after that dried, I removed the wax paper. 

The thorns are made with royal icing and also attached with royal icing.  The tips of the thorns are dabbed with red royal icing.  The cake is red velvet with cream cheese icing.

Groom's Cake

Doing the initials was a lot easier than I expected it to be.  The chocolate scrolls go all around the cake.  The scrolls get taller in the back of the cake. 

   

Cameo

For such a small cake this one took a lot of preliminary work.  But I had a lot of fun doing it.  Pretty to look at, but has to be pretty much disassembled before eating.

   

Carrie's Cake

The cake was done during my Wilton's Course III days for a co-worker.  I loved making flowers from the start.

   

Chocolate Truffles

I have made this cake a couple of times.  The truffles are hand made also as well as the chocolate hearts.  It is pretty much death by chocolate.  Everyone seems to love it.

   

Pink Lilies and Chocolate Leaves

This was another first - coating real leaves with chocolate and then peeling the leaves off with out breaking the chocolate.  Note:  allow for breakage. 

   

Miniature Auntie's Cake

Needed a cake to take to a church outing.  Had left over flowers from Auntie's cake.  Good reason to make extras or just make flowers when you feel like it.

   

Spring Flower Garden

A co-worker wanted a cake for her mother.  She found the little fairy and wanted a designed to go with it.  This one came before Auntie's cake.

   

Hand Painted Flowers

This was my first attempt at fondant flowers.  I didn't have a clue about what I was supposed to do, I just looked at a picture of a some flowers, cut out the shape, put the cutout in a lily nail to shape it. Then when it had dried I painted it with food coloring using a brush for the red and a toothpick for the peach one.

Chocolate and Strawberries

I have done this one a couple of times.  The key is to not over heat the chocolate that goes on top.  Otherwise with does not harden and runs all over the place.  Still tastes good, just extremely messy.
